डायबिटीज (मधुमेह) के मरीजों को कई बार मीठा खाने का मन करता है। ऐसे में जब चीनी खाना बिल्कुल मना हो, तो लोग ऐसे विकल्पों की तलाश करते हैं जिसमें चीनी की मात्रा कम हो पर उसका स्वाद मीठा हो। ऐसे में गुड़ को चीनी के बेहतर विकल्प के तौर पर देखा जाता है। गुड़ को खाने के सेहत से जुड़े कई फायदे भी हैं परन्तु स्वास्थ्य के लिहाज से मधुमेह रोगियों के लिए यह ठीक नहीं है।
गुड़, मिठास का पारंपरिक रूप है। गन्ने के रस को उबालने पर गुड़ बनता है। चीनी की तुलना में गुड़ कम संशोधित होता है लिहाजा इसमें पोटैशियम, आयरन और कैल्शियम जैसे जरूरी पोषक तत्व मौजूद रहते हैं लेकिन इसका मतलब यह नहीं है कि अगर किसी व्यक्ति का शुगर लेवल हाई है, तब भी वह गुड़ खा सकता है। गुड़ का भूरा रंग, देखने में भले ही हेल्थी लगे लेकिन मधुमेह के मरीजों के लिए गुड़, एक बेहतर विकल्प नहीं है। गुड़ में मौजूद आयरन की वजह से यह ऑक्सिडेटिव स्ट्रेस और ब्लड प्रेशर से लड़ने में मदद करता है लेकिन अगर आप डायबिटिक हैं, तो गुड़ से खुद को कोसों दूर रखें।
गुड़ में चीनी की मात्रा बहुत होती है। गुड़, पोषक तत्वों से भरपूर स्वीटनर है। चीनी के इस विकल्प में 65 से 85 फीसदी तक सुक्रोज पाया जाता है। यही वजह है कि डायबिटीज के मरीजों के लिए गुड़ खाना मना होता है क्योंकि इसमें चीनी की मात्रा बहुत ज्यादा होती है।
चीनी खाने से शरीर में ग्लूकोज लेवल में जो अंतर आता है और असर पड़ता है ठीक वैसा ही असर गुड़ खाने पर भी होता है। कुछ लोगों का मानना है कि अगर वे चीनी की जगह गुड़ का इस्तेमाल करते हैं, तो ब्लड शुगर लेवल को मेनटेन रखने में मदद मिलेगी लेकिन हकीकत में ऐसा नहीं होता। गुड़ में सुक्रोज होता है इसलिए इसके सेवन से ब्लड शुगर लेव में बढ़ोतरी होने लगती है। इसका मतलब है कि चीनी के किसी भी फॉर्म की तरह गुड़ भी मधुमेह के रोगियों के लिए हानिकारक है। हालांकि जिन लोगों को मधुमेह नहीं है, वे चीनी की जगह गुड़ का इस्तेमाल कर सकते हैं क्योंकि यह एक अच्छा विकल्प है।
आयुर्वेद भी यही कहता है कि डायबिटीज यानी मधुमेह के रोगियों को गुड़ नहीं खाना चाहिए। फेफड़ों के इंफेक्शन, खराब गला, माइग्रेन और अस्थमा के इलाज में आयुर्वेद, गुड़ का इस्तेमाल करता है लेकिन इलाज की इस प्राचीन पद्धति में भी मधुमेह के रोगियों के लिए गुड़ खाने की मनाही है।
